- 1 tablespoon plain flour
- 6 about 880g chicken thigh fillets coarsely chopped
- 1 teaspoon canola oil
- 1 small brown onion halved coarsely chopped
- 1 garlic clove crushed
- 2 carrots peeled coarsely chopped
- 2 sticks celery trimmed coarsely chopped
- 1 x 425g can italian diced tomatoes
- 250ml 1 cup massel chicken style liquid stock
- 1 tablespoon chopped fresh continental parsley
- 2 teaspoons chopped fresh thyme
- 1 1 2 sheets 25 x 25cm ready rolled puff pastry pampas brand just thawed
- 80g mixed salad leaves to serve

- place flour in a bowl add chicken and toss to coat shake off excess heat oil in a saucepan over high heat add one third of the chicken and cook turning occasionally for 3 minutes or until brown transfer to a bowl repeat in 2 more batches with remaining chicken reheating saucepan between batches
