Caprese Grilled Chicken with Balsamic Reduction Recipe – A favorite caprese salad takes center stage with this delicious grilled chicken!
This year is flying by like when I was a little girl and would push my bike to the top of the hill on the road from my house to my grandparents.

It was the summer after the county had just put in a new coating on the asphalt road – you know the kind that is black and hard, but still has bumpy gravel. It would take me a little while to get up my nerve to push my bike to the top of that hill, then I’d climb onto the white seat, grip my handlebars with the streamers tied to them, and push off.

There was no way of stopping once my tiny foot left the ground. I was off, flying and giggling and feeling like butterflies were flittering away in my tummy the entire time.

Well, this year has felt a lot like that, too. So full of excitement and…. well… fun!

INGREDIENTS

4 slices mozzarella
salt and pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons basil sliced
1 teaspoon Italian seasoning
4 slices tomato
4 chicken breasts

INSTRUCTIONS

Number One, Preheat grill to medium high heat.
Number Two, Season chicken breasts with italian seasoning, garlic and onion powder. Sprinkle with salt and pepper on both sides.
Number Three, Spray the grill with non stick cooking spray and cook the chicken breasts until they are almost fully cooked.
Number Four, Top each chicken breast with a slice of mozzarella. Close the grill and allow it to cook for a few additional minutes to melt.
Number Five, Remove the chicken from the grill and top with tomato and basil. Drizzle with the homemade balsamic reduction. Serve immediately and enjoy!

Balsamic Reduction

Number One, Add balsamic vinegar and brown sugar to a small saucepan. Simmer for 10 minutes or until the sauce has reduced by half. Keep warm until ready to use.
