The Instruction of pappadum chicken stacks
- add enough vegetable oil to a large deep frying pan to reach a depth of 3 4cm and heat over medium high heat to test when oil is ready a small piece of pappadum will cook immediately add one pappadum at a time and cook for 30 seconds or until puffed and lightly golden transfer to a plate lined with paper towel repeat with remaining pappadums
- cut chicken in half horizontally cut each piece into 1cm thick strips heat the extra oil in frying pan over medium high heat add half the chicken and cook turning occasionally for 3 4 minutes or until cooked through transfer to plate and cover with foil repeat with remaining chicken
- place the chicken cucumbers avocado and onion in a large bowl and toss gently until well combined combine the yoghurt coriander and mango chutney in small bowl stir until combined gradually add the water to the yoghurt mixture and stir until well combined and a thin consistency
- to serve place a pappadum on each plate spoon half the chicken mixture on top drizzle with half the yoghurt mixture place remaining pappadums on top top with remaining chicken mixture and drizzle with remaining yoghurt mixture serve immediately with salad leaves
